An Apeys Kitchen Original: Cowboy Shakshuka

This started as a copycat of the sausage skillet from Silver Dollar City but I wanted to add some eggs for some added protein...I give you Cowboy Shakshuka.

The ingredients:
2 C diced radishes
1 C diced bell pepper
3 kielbasa links sliced
1/2 C diced onion
1 tsp beef tallow
Garlic and salt seasoning
6 eggs
Herbs and garlic seasoning
Pepper
Cilantro

The recipe:
In a skillet, add beef tallow and radishes and cook for 10 min. Stirring occasionally.
Add sausage, peppers, and onion and the garlic and salt seasoning. Cook for 5 minutes.
Top with eggs, pepper, and herbs and garlic seasoning. Cook until eggs to you liking.
Garnish with cilantro.

Notes:
You can replace radishes with red potatoes.
You can use other fat source like butter or oil.
I used the Spanglish garlic and salt seasoning plus the burlap and barrel herbs and garlic.
This made 3 large servings for me with 2 eggs per serving. You can cut back on the eggs to 1 per serving.
