The Low Carb Kitchen: High Protein Enchilada Bake

I have been playing around with some cottage cheese recipes. Im not a fan of it cold but add in some eggs and other seasoning and it makes a great high protein base for bakes. 

Ingredients for the base:
2 C cottage cheese
3 eggs
1/2 C green enchilada sauce
1 tsp Taco seasoning 
1/2 tsp black lime

Recipe for the base:
Preheat oven to 400 degrees.
In a bowl mix all the ingredients above until well combined.
Bake for 20 minutes until set.

Ingredients for the topping:
1lb ground beef plus 1/2 tsp baking soda
1/2 can rotel
1 red pepper diced
Taco seasoning
Black lime seasoning
1/2 C green enchilada sauce
Shredded cheese

Recipe of the topping:
Brown beef and baking soda. 
Once browned add the peppers and rotel.
Top with Taco seasoning and black lime and combine.
Top the cottage cheese layer with enchilada sauce, then beef mixture, then cheese.
Bake an additional 15 minutes.


Notes:
I make individual servings for lunches.
You can use red enchilada sauce or green.
You can also use chicken instead of beef.
This recipe gives you over 50g of protein per serving if you are interested in that.
