2 C chopped rotisserie chicken cold
2 celery stalks diced
1 oz roasted and salted pistachios
1/2 C green pesto
1/4 C mayo
1/2 C shredded parmesan
Salt and pepper to taste
The recipe
In a bowl, combine all ingredients
Mix well to combine.
I did not add additional salt and pepper. I think the pistachios add some saltiness plus the pistachios.
Yields 4 servings
3g total carbs per serving.
Serve this in a lettuce cup, with bread or chaffles, or eat plain.
