The Southern Kitchen: Pimento Cheese

Happy Derby Day! Pimento cheese is a southern staple with a lot of flavor and can be used in many ways. It can be added to eggs, top burgers, grilled cheese, and even added to biscuits. Or you can eat it as a dip. Below is the recipe plus the recipes of 2 ways to use it. 

The ingredients:
16oz sharp cheddar shredded
4oz diced pimento drained
8oz cream cheese softened
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp salt

The recipe:
Add all ingredients to a bowl and mix well until well combined.
Refrigerate and use as needed

Notes:
1 serving = 2 Tbsp

Pimento Cheese Biscuits
2 C almond flour
1.5 C Pimento cheese
2 eggs
1/2 C heavy cream
2 TBSP butter diced
1 tsp salt
1 tsp baking powder

Preheat oven to 375.
Combine dry ingredients and mix 
Add in wet ingredients and stir to combine well. 
Scoop onto baking sheet about 12. 1-2 in apart.
Bake 25 min. 

Pimento Cheese Souffle
3 eggs
2 TBSP sour cream
Pinch salt and pepper
1/3 C pimeto cheese
1/3 C bacon optional
Herbs of choice optional

Preheat oven to 350.
Spray large ramekin cup.
Put Pimento cheese and bacon in ramekin.
Whip together eggs, sour cream, salt, peppers, and herbs.
Bake 30-35 minutes.
Serve immediately, will fall.
