A chili using chipotle and 2 types of beef. This is a spicier no bean chili.
The ingredients:4 chipotle short ribs shredded
1lb ground beef
Oil
2 bell peppers diced
Celery diced
1/2 can chipotle pureed
2 TBSP tomato paste
6 C beef broth
1/4 C chili powder
2 tsp garlic powder
2 tsp onion powder
2 TBSP Cumin
Salt and pepper to taste
Liquid smoke- dash
10 oz Cauliflower rice
Apple cider vinegar (optional)
The recipe:
In a crockpot add browned meat and veggies plus the short rib meat.
Top with the rest of the ingredients minus the vinegar.
Cook on high 3-4 hours or low 6-8.
Notes:
If a bit too spicy you can add the vinegar to cut the heat. If you do not like a lot of spicy you can cut the amount of chipotle.
