The Low Carb Kitchen: Pizza Bake

When the office is having pizza I try and make something low carb that is similar. This time I'm making this pizza bake with cottage cheese.


The ingredients:
2 C low fat cottage cheese
3 eggs
1 TBSP Italian Seasoning
1 tsp garlic powder
1 tsp onion powder
1/2 C pizza sauce
4 oz Mozzarella shredded
Topping of choice

The recipe:
Preheat the oven to 400 degrees.
In a bowl, mix cottage cheese, eggs, and seasoning and mix well.
Bake cottage cheese layer in greased square pan for 20 minutes until set.
Spread pizza sauce over the cottage cheese layer.
Add toppings of choice 
Top with mozzarella.
Bake an additional 15-20 minutes.

Notes:
I used pizza seasoning instead of Italian Seasoning.
For toppings I used Italian sausage, mushrooms, black olives, and mini peppers.
The pizza sauce i used was Rao's Margherita pizza sauce.
You can put toppings on top of cheese if desired instead.
