The Low Carb Kitchen: Asian inspired Ham Balls with Asian inspired veggies

I wanted to do a twist on one of my favorite family recipes. Ham balls with an Asian twist using a pinneapple ginger marinade. I used a store bought marinade from G Hughes. The nice thing about these is there is hardly any fat that melts out like in beef meatballs. They are also really easy to make. 
Pinneaple Ginger Ham Balls
The ingredients:
1 lb ground ham
1 lb ground pork
1 C pork rind panko
2 eggs
1 TBSP G Hughes pinneaple ginger marinades
The recipe:
Preheat oven to 325.
Add all ingredients to a stand mixer and mix until well combined.
Grease a baking pan.
Using a cookie scoop make meatballs and line baking pan.
Bake for 30 minutes
Remove and brush with additional marinade about 1/2 C.
Bake for an additional hour.
Asian inspired veggies
The ingredients:
Green beans
Zucchini
Butter
1 TBSP Soy sauce
1 TBSP sesame oil
Garlic
Ginger
Dash of G Hughes Pinneaple Ginger Marinade
1 TBSP sesame seeds
The recipe:
Add butter to skillet, then add Veggies (beans first I learned is best).
Add seasonings and sauces and stir to combine. 
Add the marinade and sprinkle sesame seeds on top.
I drizzled a bit more of the marinade at the end. This was a great alternative to the original marinade that was loaded with sugar. I only used about 1/2 the jar of marinade since I brushed it on vs pouring it. 

If you have more meatballs than your dish will hold you can freeze them raw in the freezer on a baking sheet. Then add to ziploc. Put the baking instructions on the bag. Pull out when you have time to bake them up later.
