I know what you are thinking what? A healthy mac and cheese? Let's say it is a healthier mac and cheese. This is due to using less butter, some lighter cheese, turkey kielbasa, and adding veggies.
The ingredients:
Box of elbow pasta cooked and drained (I used a low carb pasta)
6 andouille or kielbasa sausage (chicken or turkey)
1 can Rotel drained
1 green bell pepper diced
2 C mozzarella cheese shredded
2 C sharp cheddar cheese shredded
2 TBSP butter
1 TBSP white whole wheat flour
1.5 C milk
1/4 tsp salt
1-2 TBSP creole seasoning
sprinkle of smoked paprika
The recipe:
Cook the noodles, drain and set aside.
Cube the sausage and add to baking dish, add Rotel and pepper and bake for 15-30 minutes and set aside.
Preheat oven to 350 degrees.
In pan over medium heat, melt the butter then stir in the flour and salt.
Slowly stir in the milk and cook until smooth and slightly thickened.
Lower heat to low and add the shredded cheese and whisk until completely melted then stir in the creole seasoning.
Add the noodles and meat mixture to the cheese and stir until coated then pour into baking dish.
Top with a bit more shredded cheese and sprinkle paprika on top.
Bake for 15 minutes.
In desired, place under broiler for a few minutes until browned but not burnt.
Notes:
It was good with the turkey kielbasa, but I would prefer the chicken andouille it has a bit more spiciness. I used regular sharp cheddar and mozzarella, but this would be good with pepperjack of white sharp cheddar as well. This was not super spicy to me, and I could have added more creole seasoning or a dash of cayenne. If you use the andouille instead of kielbasa that would give the additional kick I like.
This would be good as a side or as a meal.
